This month, commit to gathering around your family’s kitchen table as much as possible. We know our calendars can get full fast with other commitments, so let’s make a plan! Circle several evenings on your calendar this month and commit to being all together for a meal. Here’s a simple sheet tray meal that you can make as a family. 

Chicken and Stuffing Sheet Pan Dinner


  • 1/2 loaf Ciabatta, cut into bite-size pieces (or any rustic style bread)

  • 4 c. boxed stuffing

  • 1 red onion, chopped

  • 3 stalks celery, sliced

  • 2 carrots, peeled and cut into rounds

  • 1 1/2 tsp. Kosher Salt

  • 1 tsp. Black Pepper

  • 1/2 tsp. Ground Sage

  • 1/2 tsp. Ground Thyme

  • 1 cup chicken stock

  • ¼ cup olive oil

  • 8 whole bone-in Chicken thighs

  • ½ cup butter, cut into cubes


  1. Preheat the oven to 425 degrees.

  2. Place the bread cubes, stuffing with seasoning packet, onion, celery, and carrots on a sheet pan.

  3. Drizzle with olive oil and chicken stock. Toss together with your hands.

  4. Nestle the chicken thighs all around the pan, skin side up.

  5. Combine salt, pepper, and herbs and sprinkle mixture all over the chicken.

  6. Scatter the top with the butter.

  7. Bake for 15 minutes.

  8. Use a spatula to mix the bread and veggies, making sure they are absorbing the better and chicken stock.

  9. Continue roasting for 25 to 30 minutes, or until the chicken is completely cooked. Enjoy your complete one-pan dinner as a family.
