Who doesn’t love an easy one-pot meal? Use this simple but tasty recipe to build confidence in the younger members of your family, allow everyone to help make this delicious meal. Lasagna Soup gives you the cooked all-day flavor of lasagna, but in one pot and in a lot less time. Enjoy this spin on a classic for dinner tonight.

Ingredients: Lasagna Soup

  • 1 pound Italian Sweet Sausage
  • 1 28-ounce can of Tomato Puree
  • 1 32-ounce box of Chicken Stock
  • 3 crushed Garlic Cloves
  • 1 box Lasagna Noodles
  • 2 tablespoons Italian Seasoning
  • 1 cup Heavy Cream
  • 1 10 ounces tub ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded parmesan cheese
  • 2 tablespoons olive oil
  • Fresh Basil for Garnish
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, cook sausage until browned for about 7 minutes. Season with salt and pepper. Remove meat from the pot and discard grease. 
  2. In the same large pot add olive oil on low heat. Toss in minced garlic and cook for a minute or two. Do NOT brown!
  3. Stir in tomato puree, Italian seasoning, and chicken stock. Return meat to pot.
  4. Bring to boil then add lasagna noodles (broken into bite-size pieces) reduce heat to medium-low and cook, stirring occasionally until noodles are cooked through, about 10 minutes. If soup gets thick add ¼ of a cup of water until desired thinness.
  5. Once noodles are cooked, stir in heavy cream, and simmer on low for 2 minutes.
  6. In a small bowl, mix mozzarella, parmesan, and ricotta cheeses. Add ½ of the cheese mixture to the soup. Cover and simmer for five minutes.
  7. Ladle the hot soup into bowls, and dollop a scoop of the cheese mixture on top. Garnish with fresh basil. And serve with garlic bread.
